Vinification
Full fermentation in a 500-liter French oak barrel with bâtonnage.
Ageing
9 months in a 500-liter French oak barrel, followed by 6 months in bottle.
Notes
Yellow with golden hues derived from barrel fermentation.
Citrus profile with almond notes; orange blossom and lemon tree floral nuances emerge on the retronasal.
On the palate, the acidity is clearly present, revealing great freshness and minerality.
Generous and enveloping, it shows a creaminess that gives it a long, unctuous finish.

Its structure and complexity allow for a wide range of pairings with fish and select meats.
It is also well-suited to various cheeses, particularly strong or intensely flavoured styles.

Although it can be drunk from a young age, it is a wine with great longevity and potential for good ageing.

Pre-fermentation maceration and fermentation at controlled temperature.
Ageing
9 months in stainless steel, 12 months in bottle.
Notes
The citrus yellow colour with golden nuances is the result of the pre-fermentation maceration of the grapes. The initial aromatic subtlety highlights the nature of the Encruzado variety. Meanwhile, floral aromas stand out and the green pine needles that appear in the retronasal also reveal hazelnut. Unctuous and vibrant in the mouth, it reveals a freshness reminiscent of granite and citrus. The maceration of the skins and batonnage in stainless steel give structure to this wine, which so well represents Dão and the Encruzado variety.

This is a non-seasonal wine that goes well with fresh food typical of the warmer seasons, such as fish and seafood, but is also suitable for pairing with some strong dishes, such as baked fish, cod, some light meats and cheeses.
Serve between 10ºC and 13ºC.
