Vinification
Full fermentation in a 500-liter French oak barrel with bâtonnage.
Ageing
9 months in a 500-liter French oak barrel, followed by 6 months in bottle.
Notes
Yellow colour with golden nuances resulting from barrel fermentation.
The aroma reveals floral and citrus notes, with hints of almond, light pineapple, and a subtle touch of fresh peach, while on the retronasal, floral notes of orange blossom and lemon tree stand out.
The complexity is completed by a clear minerality, accompanied by a subtle hint of vanilla.
On the palate, it is dry, vibrant, and crisp, with a well-defined acidity. Ripe plum and white chocolate are accompanied by a remarkable freshness of lime and peach, all wrapped in a subtle hint of vanilla that gives it volume and texture.
Enveloping, it reveals a creaminess that gives it a smooth and long finish.

Its structure and complexity allow for a wide range of pairings with fish and various meats.
It is also well-suited to various cheeses, particularly strong or intensely flavoured styles.

Vinification
Pre-fermentation maceration. Fermentation at controlled temperature and light bâtonnage in stainless steel.
Ageing
6 months in stainless steel, 4 months in bottle.
Notes
Citrine yellow in color, with golden nuances resulting from the pre-fermentative skin maceration of the grapes.
On the nose, freshness is accompanied by a slight flinty aroma, an aromatic subtlety characteristic of the Encruzado grape variety. Floral notes and green pine needles stand out on the retronasal, along with hints of hazelnut.
On the palate, the freshness recalls granite and citrus. Skin maceration, combined with bâtonnage in stainless steel and ageing on fine lees, has given it a well-structured body. Unctuous, it is a wine with a strong gastronomic vocation.

This is a non-seasonal wine that goes well with fresh food typical of the warmer seasons, such as fish and seafood, but is also suitable for pairing with some strong dishes, such as baked fish, cod, some light meats and cheeses.
Serve between 10ºC and 13ºC.
